Graduation Party Menu

Today issues in the preparations for the big graduation(s) party this Saturday.  In addition, we’re throwing in a birthday party to the mix.  Kid #2 Rich turns 26 in a few days – my strawberry boy. 

I have a recipe book entitled The Ultimate Cooking with Four Ingredients (Yes!  My kind of cooking!) which has an easy strawberry trifle recipe.

We love strawberries!

Strawberry Trifle
1 – 5oz. package French Vanilla Instant Pudding mix
1 – 10 oz. loaf pound cake
½ cup sherry
2 cups fresh strawberries
Make pudding per instructions.  Place a layer of pound cake slices in the bottom of an 8-inch crystal bowl.  Sprinkle with ¼ cup sherry.  Add a layer of strawberries.  Add a layer of pudding (use half).  Repeat.  Refrigerate until cool.  For serving, top with whipped cream.

We decided on finger foods:  Stolen pimento cheese on rye, chicken salad croissants, sub sandwiches; seven-layer, spinach, and hot cheese dips; lots of chips; relish, cheese, veggie trays, and CAKE.  Don’t you just love the word CAKE?

I have a million things to do today, so I’m off.  Y’all have a CAKE-kind of day!
