Friday Night Stew

How about a warm, savory stew tonight?

And cheese biscuits? Crackers and cheese? Sweet cornbread?

With the temperatures dipping, it’s time to break out the woolens, put a fire in the fireplace, and have the newest, favorite book at hand. But, you have to have a good stew. Nothin’ like it. If you like vegetable or tomato based soups, try this one:

Debbie’s Autumn Beef Stew
1-2 lb. package beef stew meat
3 Tablespoons Smart Balance oil
1 large can V8
3 large carrots, chopped into bite-size pieces or sliced
6 medium to large potatoes, chopped into bite-size pieces
1/2 large onion, chopped
1 stalk celery, chopped
2 cups water, white wine, beef stock, or combination
salt, pepper, parsley, oregano, basil to taste
optional: 1/2 cup of vegetables like peas, green beans, or kernel corn

Brown meat, onion, celery, salt and pepper with oil in a dutch oven.
Add remaining ingredients and liquids and simmer on low heat for 1 hour or in a crock pot for 4-6 hours.
Serves 6-8.
